2 sticks celery
Half small fennel bulb
Extra virgin olive oil
I put this together as a quick and easy starter, or serve it with a hunk of soda bread that for lunch. It’s light, refreshing and really easy to pull together. Perfect if you don’t have lots of time for prep time.
Simply peel and thinly slice the orange, place on a plate. Chop the celery and place on the plate with the orange pieces. Slice the fennel (you might want to do this with a mandolin to get really slender slices) add these slices to the salad. Sprinkle the little green frilly bits from the fennel (the fronds) over the salad, pour over a little of the best quality extra virgin olive oil you can find. Enjoy this fresh tasting salad.
